Weight Watchers Simple Start

I was given a free one-month subscription to try the new Simple Start plan and write about my experience.  Though I was compensated for my time and commitment, all views, positive and negative are my own.

If you follow me on Instagram (if you don't, you should!), you may have seen that I've embarked on a new journey with Weight Watchers Simple Start program. To give a little background, Weight Watchers has a daily points system that assigns value to certain food groups. Heavier foods obviously have more points, as fruits and veggies ("green triangle foods") have zero, as you're expected to eat these and they have a zillion points worth of nutritional value.
My girl Caitlin of Closet Confessions has been using the Weight Watchers Simple Start program for over a year now and looks AMAZING, so she checked in with me to give me some tips! She steered me in the right direction, and now I'm experimenting with new things (and trying to incorporate more "green triangle" items). Since last week I've made three staple items:

Chia Seed Pudding
1 tbsp chia seeds
1/2 cup almond milk (I prefer vanilla)
1 tbsp agave nectar
fruits for topping
Drop the chia seeds into the almond milk. Sit in the fridge for at least 4 hours. I personally like to keep it in the fridge for a couple of days so the pudding gets nice and gooey!

Paleo Egg Muffins (yields 12)
10 eggs
various veggies - I like tricolor peppers, red onions, broccolli
1 tsp minced garlic
chopped kale or spinach
dash of salt and pepper
Scramble the eggs with the ingredients. Drop into muffin tin. Bake for 15 minutes at 350 degrees.

Turkey Omelette with Black Bean and Corn2 eggs1 handful of ground turkeya bit of red onion1 tsp of minced garlicdash of salt and pepper
SALSA:1/4 cup canned black beans1/4 frozen corn4 tbsp Trader Joe's SalsaScramble the eggs with ingredients. Drop in skillet. When slightly brown, flip over. Once cooked on both sides, fold in half. Warm salsa ingredients in microwave, then drop on the side of the egg.So there's a few of my simple changes I'm making since starting on the Weight Watchers Simple Start plan. Since mentioning on Instagram, I've gotten an overwhelming response from people that have participated as well. Have you? Share your experience!
