HEALTHY: Five-Minute Meals, Healthy Edition #PSPFit
Whenever I speak to anyone about #PSPfit, or a healthy journey in general, I more often than not hear "I don't know how you do it. That stuff doesn't taste good to me." What I'd like people to understand is that you CAN eat healthy foods and still have FUN. It's all about reading ingredient labels, knowing your herbs and spices, and making food on your own.
Also, people love to tell me that making these meals are time consuming. Most of my meals doesn't take more than five minutes to prepare. I'm no Food Network star, but I've really gotten into cooking and I love to snap away on Instagram. Here's some of my favorites:
A healthy brunch! lox, half a wheat bagel, warm grilled pears and two poached eggs. I literally put hot sauce on EVERYTHING, especially eggs. A 5-minute meal!
Blackened chicken with corn, avocado, and salsa on spinach. Another 5-minute meal. Cut up the avocado, take the spinach out of the bag, throw some frozen corn in the microwave, scoop some salsa, and voila!
Watermelon with mint and feta cheese, with lime squeezed over it. FIVE MINUTES.
Mushroom, kale, and red pepper frittata with black beans and salsa. Cinco minuto.
Healthy breakfast! Poached eggs, kale, and turkey bacon. I like to top a lot of my meals with red pepper chili flakes, they speed up the metabolism.
